Hearty Chicken and Vegetable Stew

Ingredients

  • One pound of chicken breast or thighs, cooked and shredded
  • Two tablespoons of olive oil
  • One large onion, chopped
  • Three cloves of garlic, minced
  • Three carrots, sliced
  • Three medium potatoes, cubed
  • One cup of frozen peas
  • Four cups of chicken broth
  • One cup of water
  • Two tablespoons of tomato paste
  • One teaspoon of dried thyme
  • One teaspoon of dried rosemary
  • Salt and pepper to taste
  • Fresh thyme or parsley for garnish

Directions

  1. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add chopped onion and cook until soft, about five minutes. Add garlic and cook for another minute until fragrant.
