Lemon Cheesecake Cookies

Ingredients

For the Cookies:

1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

For the Cheesecake Topping:

8 oz cream cheese, softened

1/3 cup granulated sugar

1 egg yolk

2 teaspoons lemon juice

1 teaspoon lemon zest

Instructions

1. Preheat your oven:

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

 

2. Make the Cookie Dough:

In a large bowl, cream together the butter and sugar until light and fluffy

Beat in the eggs one at a time then stir in the vanilla extract

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt

Gradually blend the dry ingredients into the butter mixture until fully incorporated

 

3. Prepare the Cheesecake Topping:

In a medium bowl, beat the cream cheese until smooth

Add the sugar, egg yolk, lemon juice, and lemon zest. Mix until well combined

 

4. Assemble the Cookies:

Scoop tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart

Using the back of a spoon or your thumb, create a small indentation in the center of each cookie dough ball

Fill each indentation with a teaspoon of the cheesecake mixture

 

5.Bake:

Bake in the preheated oven for 12-15 minutes, or until the edges of the cookies are golden brown

Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely

 

6. Enjoy:

Once cooled, enjoy your lemon cheesecake cookies. Store any leftovers in an airtight container in the refrigerator
