Jalapeno Popper Casserole Recipe

Ingredients
- Two packages of cream cheese, softened at room temperature
- One cup of sour cream
- Two cups of Mexican cheddar jack cheese, shredded and divided
- One pound of bacon, cooked and crumbled
- Six jalapeno peppers, deseeded and diced
- One to two-pound bag of tater tots
- Six green onions, thinly sliced
Instructions
- Preheat the oven to four hundred twenty five degrees Fahrenheit.
- Coat a baking dish with nonstick baking spray.
- Pour a layer of tater tots into the casserole dish.
- Bake at four hundred twenty five degrees for fifteen minutes.
- Cook the bacon and place it on paper towels to absorb excess grease. Once cooled, crumble the bacon into small pieces.
- Dice the jalapeno peppers and slice the green onions.
- In a medium bowl, combine the cream cheese, sour cream, one and a half cups of cheddar jack cheese, and half of the crumbled bacon. Stir to mix.
- Add three fourths of the diced jalapenos and green onions to the cream cheese mixture. Mix well.
- Once the tater tots are done baking, spread the jalapeno mixture evenly over the top.
- Garnish with the remaining cheese, bacon, and jalapenos.
- Bake at four hundred twenty five degrees for twenty minutes.
