Ingredients:
4 boneless, skinless chicken breasts
1 cup ricotta cheese
1 cup fresh spinach, chopped
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Salt and pepper to taste
2 tablespoons olive oil
1/2 cup chicken broth
Directions:
Preheat your oven to 375°F (190°C).
In a bowl, mix together the ricotta cheese, spinach, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
Cut a pocket into the side of each chicken breast. Stuff the ricotta mixture evenly into each pocket.
